Ingredients
  

  • 3 ripe bananas about 1 ½ cups mashed
  • cup coconut sugar
  • ¼ cup maple syrup
  • ¼ cup non-dairy milk
  • 2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 3 tbsp coconut oil melted
  • 2 cups oat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • cup vegan chocolate chips plus more for topping
  • ¼ cup walnuts chopped

Instructions
 

  • Preheat oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  • Mash ripe bananas in a large bowl until mostly smooth with a few small chunks.
  • Whisk in coconut sugar, maple syrup, non-dairy milk, vanilla extract, apple cider vinegar, and melted coconut oil until combined.
  • In another bowl, combine oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Add dry mixture to wet ingredients and stir until just combined. Fold in chocolate chips and walnuts.
  • Pour batter into the loaf pan and sprinkle extra chocolate chips on top.
  • Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!

Notes

You can swap oat flour for almond or gluten-free all-purpose flour. Add berries or dried fruits for variation.
