  • 2 pieces eggs Can substitute with flax eggs or chia seeds.
  • ¼ cup honey or maple syrup For a vegan option, use maple syrup.
  • 1 teaspoon baking soda Ensure it's fresh for better rising.
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional) Adds extra flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Gather all ingredients before starting the preparation.

Mixing

  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the eggs, honey or maple syrup, vanilla extract, and cinnamon to the mashed bananas and whisk until well combined.
  • In a separate bowl, sift together the almond flour, baking soda, and salt.
  • Gradually blend the dry ingredients into the wet ingredients, stirring gently until just combined.

Baking

  • Pour the batter into the greased loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean from the center.
  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze individual slices tightly wrapped.
