Ingredients
  

Main Ingredients

  • 1 lb ground chicken lean
  • 4 cups coleslaw mix shredded cabbage and carrots
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp ginger minced
  • 2 green onions sliced for garnish
  • salt and pepper to taste

Instructions
 

  • Prepare all ingredients and chop vegetables. Gather your spices and sauces.
  • Heat sesame oil in a large skillet over medium heat.
  • Add ground chicken to the skillet. Cook for 6–8 minutes until browned, breaking it apart with a spatula.
  • Stir in minced garlic and ginger. Cook for 1 minute until fragrant.
  • Add the coleslaw mix to the skillet. Stir until combined and slightly softened, about 2–3 minutes.
  • Pour in soy sauce and mix well. Season with salt and pepper to taste.
  • Continue cooking for another 3–4 minutes until cabbage is tender but still crisp.
  • Stir in green onions and serve warm. Optional: top with sesame seeds or sriracha.

Notes

This dish is perfect for meal prep and can be stored in the fridge for up to 4 days. For a vegetarian option, swap the chicken for tofu or tempeh.
