For the Chicken

  • 1 pound boneless, skinless chicken breasts Can be substituted with turkey breast or chickpeas.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper

For Assembly

  • 4 pieces Taco shells or tortillas Use corn tortillas for gluten-free option.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, diced
  • ½ cup feta cheese, crumbled Can substitute with dairy-free cheese.
  • fresh parsley for garnish

Instructions
 

Preparation

  • Gather all your ingredients. Wash and chop vegetables.
  • In a bowl, combine olive oil, minced garlic, cumin, paprika, salt, and pepper. Add chicken, coat well, and marinate for at least 30 minutes.
  • Preheat grill or skillet over medium heat.

Cooking

  • Cook chicken for 6-7 minutes on each side or until fully cooked (internal temperature 165°F).
  • Remove from heat and let rest for a few minutes before slicing.

Assembly

  • Slice the chicken into thin strips.
  • Assemble tacos with sliced chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  • Serve immediately while warm.

Notes

For added flavor, squeeze fresh lemon juice over assembled tacos. Serve with salads or grilled vegetables.
