  • 2 cups rolled oats Use certified gluten-free for gluten-sensitive individuals.
  • 1 cup mixed nuts (cashews, almonds, walnuts), chopped Feel free to substitute with your favorite nuts.
  • ½ cup pumpkin seeds
  • ¼ cup chia seeds Can be substituted for other seeds.
  • ¼ cup flaxseeds Can be substituted for other seeds.
  • 1 cup dried cranberries or raisins Customize with your favorite dried fruits.
  • ½ cup natural peanut butter or almond butter Sunflower seed butter can be used for a nut-free option.
  • ¼ cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions
 

Preparation

  • Start by measuring out all your ingredients.
  • Preheat your oven to 325°F.

Mixing

  • In a large mixing bowl, combine the rolled oats, chopped mixed nuts, pumpkin seeds, chia seeds, flaxseeds, and dried cranberries (or raisins). Stir well.
  • In a small saucepan, gently melt the peanut butter (or almond butter) and honey (or maple syrup) over low heat.

Combining

  • Pour the melted nut butter and honey mixture over the dry ingredients in the mixing bowl and mix thoroughly.
  • Using a cookie scoop or spoon, portion out the dough onto a prepared baking sheet.
  • Gently press each cookie down to flatten them into rounds.

Baking

  • Bake in the preheated oven for 12–15 minutes, until golden brown.
  • Remove cookies from the oven and let them cool completely on a wire rack.

Notes

Store cookies in an airtight container for up to one week or refrigerate for up to two weeks. Cookies freeze well for 3–6 months.
