  • 2 cups mashed potatoes For a lower-carb option, use cauliflower mash.

  • ¼ cup milk Use dairy-free milk if needed.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine lean ground turkey, breadcrumbs, egg, chopped onion, 1/4 cup milk, Worcestershire sauce, and a pinch of salt and pepper. Mix until just combined.
  • Shape the mixture into a loaf shape and place it into a greased baking dish.

Baking

  • Bake the meatloaf for 45-50 minutes, checking for a golden-brown crust and an internal temperature of 165°F (75°C).

Mashed Potatoes

  • While the meatloaf is baking, boil peeled potatoes in salted water for 15-20 minutes until tender.
  • Drain the water and return the potatoes to the pot. Add in butter, 1/4 cup milk, and salt. Mash until smooth and creamy.

Serving

  • Let the meatloaf rest for a few minutes before slicing. Serve alongside a generous scoop of mashed potatoes.
