  • 1 cup cashews, soaked Provides creaminess and healthy fats.
  • 1 cup nutritional yeast Adds that cheesy flavor.
  • 1 cup almond milk Choose unsweetened for best results.
  • 1 tablespoon lemon juice Brings brightness and tang.
  • 1 teaspoon garlic powder Adds essential flavor.
  • 1 teaspoon onion powder Complements the garlic nicely.

Instructions
 

Preparation

  • Soak the cashews for about 2–4 hours to ensure a creamy texture for your sauce.
  • Cook the gluten-free pasta according to package instructions, usually boiling for 8–10 minutes until al dente.

Making the Sauce

  • Drain and rinse the soaked cashews to remove any bitterness.
  • In a high-speed blender, combine the soaked cashews, nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until completely smooth and creamy.

Combining

  • Pour the blended sauce over the cooked pasta in a large bowl. Mix well until every piece is coated.

Serving

  • Serve warm, garnished with fresh herbs or extra nutritional yeast if desired.

Notes

Make ahead for quick meals throughout the week. Store leftovers in an airtight container. Reheat with a splash of almond milk for creaminess.
