  • 1 pound lean ground beef Use lean beef for a healthier option.
  • 2 medium zucchinis, sliced
  • 1 piece bell pepper, sliced Any color bell pepper works.
  • 3 cloves garlic, minced Fresh garlic is preferred for best flavor.
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • to taste Salt and pepper Adjust to personal preference.
  • as needed Cooked rice Optional, for serving.

Instructions
 

Preparation

  • Prep your workspace by gathering all ingredients and tools.
  • Wash and slice the zucchinis and bell pepper, and mince the garlic.

Cooking

  • Heat 1 tablespoon of olive oil in a skillet over medium heat until shimmering.
  • Add the lean ground beef, breaking it up with a wooden spoon, and cook until browned (about 5-7 minutes).
  • Stir in the sliced bell pepper and minced garlic, sautéing for another 2-3 minutes.
  • Add the sliced zucchini, cooking for an additional 5-7 minutes until tender but still crisp.
  • Pour in the soy sauce, stirring well to coat, and let cook for another minute.
  • Season with salt and pepper to taste before serving.

Serving

  • Serve hot, either on its own or over cooked rice. Garnish with green onions or sesame seeds if desired.

Notes

Great as leftovers! Can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
