Ingredients
  

Main Ingredients

  • 2 cups mixed vegetables such as carrots, potatoes, and bell peppers, diced
  • 1 can (15 oz) chickpeas drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • salt and pepper to taste
  • fresh herbs optional, for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chopped onions and minced garlic, sautéing until fragrant and translucent.
  • Combine sautéed onions and garlic with diced vegetables, chickpeas, diced tomatoes, and vegetable broth in the crockpot. Stir well to mix.
  • Add dried basil, oregano, salt, and pepper. Mix thoroughly to ensure even seasoning.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until vegetables are tender.
  • Check for doneness, adjust seasonings if needed, and serve warm. Garnish with fresh herbs if desired.

Notes

This meatless crockpot stew freezes beautifully and can be made ahead of time. Add lentils, black beans, or even coconut milk for a fun twist. Avoid overcooking vegetables for the best texture.
