For the Custard and Garnish

  • 2 cups creamy custard Acts as a delicious filling and topping.
  • 1 banana sliced For garnishing the cake.
  • ¼ cup whole or halved walnuts For decorative garnish.

Instructions
 

Preparation

  • Gather ingredients and ensure butter is softened. Preheat oven to 350°F (175°C).
  • Grease and flour two 8-inch round cake pans.
  • In a medium bowl, whisk together flour, baking soda, and salt and set aside.

Baking

  • In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, and blend in vanilla extract.
  • Mix in sour cream and mashed bananas until fully combined.
  • Gradually add dry ingredients to wet mixture, mixing until just combined.
  • Fold in chopped walnuts and white chocolate chips.
  • Divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean.
  • Cool in pans for 10 minutes before transferring to a wire rack to cool completely.

Assembly

  • Spread half of the custard on top of one cooled cake layer.
  • Top with the second layer and cover with remaining custard.
  • Garnish with banana slices and walnuts.

Notes

Store covered in the refrigerator for 4-5 days. It can also be frozen in slices for later enjoyment.
