  • ½ cup powdered sugar Additional for dusting
  • ¼ cup cornstarch
  • 1 ½ cups all-purpose flour
  • ½ teaspoon peppermint extract
  • ¼ teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream the softened butter with the powdered sugar until light and fluffy.
  • Gently mix in cornstarch, all-purpose flour, peppermint extract, and salt until the dough just comes together.
  • Roll the dough into small balls, about one inch in diameter, and place them on a parchment-lined baking sheet.
  • Gently flatten each ball slightly using the bottom of a glass.

Baking

  • Bake in the preheated oven for 10-12 minutes until the edges are light golden brown.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Finishing Touch

  • Dust the cooled cookies with additional powdered sugar before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freezing is also an option for longer storage.
