Ingredients
  

Main Ingredients

  • 1 lb ground beef You can substitute with ground turkey or plant-based meat.
  • 4-5 medium potatoes, thinly sliced (about 1/4 inch thick) Sweet potatoes or butternut squash can be used as replacements.
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • ½ cup beef broth Can substitute with vegetable broth.
  • ¼ cup milk (optional) Use plant-based milk for dairy-free option.
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • to taste Salt and pepper
  • 1 ½ cups shredded cheddar cheese Gouda or mozzarella can be used instead.
  • ½ cup grated Parmesan cheese
  • for garnish Fresh parsley

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and prepare all ingredients.
  • Slice potatoes to about a quarter inch in thickness, dice the onion, and mince the garlic.

Cooking

  • In a skillet, heat olive oil over medium heat, add onion and garlic, and sauté for 2-3 minutes until translucent.
  • Add ground beef, breaking it up. Cook for 5-7 minutes until browned, seasoning with Italian seasoning, paprika, salt, and pepper.
  • In a greased baking dish, layer half of the potatoes, followed by half of the beef mixture, and half of the shredded cheese.
  • Repeat with remaining potatoes, beef, and cheese.
  • Pour broth and milk over the casserole.
  • Cover with foil and bake for 35-40 minutes. Remove foil and bake for an additional 10 minutes, or until golden.
  • Let the casserole rest for 5 minutes and garnish with parsley before serving.

Notes

Can be made ahead of time and stored in the fridge for up to 3-4 days. Freezes well for up to 2-3 months.
