Main Ingredients

  • 1 lb ground turkey (or chicken) Can substitute with ground beef or plant-based protein.
  • 2 cups mixed vegetables (carrots, peas, bell peppers) Feel free to use seasonal veggies.
  • 1 unit onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • 1 cup shredded cheese (cheddar or mozzarella) Can use vegan cheese for dairy-free option.
  • 4 large tortillas (or your choice of wraps) Gluten-free tortillas can be used.
  • as desired sour cream or guacamole for serving

Instructions
 

Preparation

  • Start by gathering all your ingredients and chopping the vegetables. Dice your onion, mince the garlic, and measure out the spices ahead of time.

Cooking the Base

  • In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.

Adding Vegetables

  • Toss in the mixed vegetables and cook for about 5-7 minutes or until they are tender and vibrant, stirring occasionally.

Cooking the Protein

  • Add your ground turkey (or preferred protein) to the skillet, breaking it up with a spatula. Cook until browned and thoroughly cooked, about 7-10 minutes.

Seasoning

  • Season the mixture with salt, pepper, thyme, and rosemary. Stir to combine and let it simmer for another 5 minutes.

Preparing Tortillas

  • Warm your tortillas in another pan or directly over a flame for a few seconds on each side to make them pliable.

Assembling the Wraps

  • Taking a tortilla, add a generous portion of your filling and top with shredded cheese. Roll tightly, ensuring the filling stays inside. Continue until all ingredients are used.

Cooking the Wraps

  • In the same skillet, place the wraps seam-side down and cook for 2-3 minutes on each side until golden and crispy. Add extra oil if necessary.

Notes

For best results, prepare some dishes in advance. These wraps can also be customized for various dietary needs.
