  • 2 tablespoons lemon juice
  • 1 pinch salt
  • 1 cup water

Preparation

  • Thoroughly wash fresh cherries and remove the pits.

Cooking the Base

  • In a medium saucepan, combine prepared cherries, sugar, lemon juice, and a pinch of salt. Heat over medium heat while stirring occasionally for about 5-7 minutes until bubbling.

Make a Slurry

  • In a separate bowl, mix cornstarch with water to create a smooth slurry.

Combine Mixtures

  • Once the cherry mixture is bubbling, pour the slurry into the saucepan.

Thickening the Filling

  • Stir continuously for 2-3 minutes until the mixture thickens and turns glossy.

Achieve the Right Consistency

  • The filling is ready when it coats the back of a spoon. Remove from heat and let cool for a few minutes.

Storage

  • Transfer filling to a storage container and cool completely before sealing.
