Ingredients
  

For the Meat Mixture

  • 1 lb ground lamb or a mix of lamb and beef
  • ½ cup onion finely grated
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika smoked or sweet
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp black pepper

For Serving

  • 4 pita breads or flatbreads
  • 1 cup shredded lettuce
  • 1 tomato thinly sliced
  • ½ red onion thinly sliced
  • ½ cup garlic yogurt sauce or tahini sauce

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground lamb, grated onion, garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well until fully combined and sticky in texture.
  • Transfer the mixture to a food processor and pulse until smooth. This helps the meat hold together and mimic authentic doner texture.
  • Press the mixture tightly into a loaf pan. Bake for 35–40 minutes, or until cooked through and browned on top.
  • Let the meat rest for 10 minutes, then slice thinly with a sharp knife.
  • Serve in warm pita bread with lettuce, tomato, onion, and garlic yogurt sauce. Add chili sauce for extra heat if desired.

Notes

For a smoky flavor, brush the baked kebab slices with a bit of olive oil and sear them in a hot skillet or grill pan before serving.
