  • 1 cup diced vegetables Bell peppers, onions, and spinach or any favorites.
  • 1 cup shredded cheese Cheddar or feta recommended.
  • Salt and pepper to taste
  • 2 tablespoons olive oil For cooking in the skillet.

Preparation

  • Start by gathering all your ingredients. Dice your preferred vegetables and shred the cheese.
  • In a medium bowl, whisk together the eggs and milk until frothy.
  • Fold in the diced vegetables, cheese, salt, and pepper into the egg mixture.
  • In an oven-safe skillet, heat the olive oil over medium heat.

Cooking

  • Pour the egg and vegetable mixture into the hot skillet and cook for about 5 minutes, until edges start to set.
  • Transfer the skillet to the preheated oven at 375°F (190°C) and bake for 15-20 minutes or until fully set.
  • Check for doneness by inserting a toothpick in the center; it should come out clean.
  • Let the frittata cool slightly, then slice into wedges and serve.

Serving

  • Serve warm, optionally with a crisp green salad or crusty bread.

Notes

Can be customized with various vegetables, meats, or cheeses. Excellent for gatherings or meal prep. Store in an airtight container for up to 3-4 days in the refrigerator or freeze for 2-3 months.
