  • ½ cup olive oil Extra virgin olive oil recommended for quality.
  • 1 teaspoon Dijon mustard Can substitute with whole grain mustard or omit.
  • 1 clove garlic, minced Optional; can substitute with garlic powder.
  • to taste Salt and pepper Adjust to preference.

Preparation

  • Gather all ingredients and measure out the lemon juice and olive oil.
  • Mince the garlic clove and set aside.

Combining

  • In a medium bowl, whisk together the fresh lemon juice, Dijon mustard, and minced garlic.
  • Slowly drizzle in the olive oil while continuously whisking to emulsify.
  • Season with salt and pepper to taste.

Serving

  • Use immediately by drizzling over salads or refrigerate in an airtight container.
  • Shake or stir before using if stored.

Notes

Store in an airtight container in the refrigerator for up to a week. Flavors improve over time. Shake well before using.
