  • 1 tablespoon olive oil Used for cooking the chicken.
  • 1 teaspoon garlic powder Enhances the flavor of the chicken.
  • Salt and pepper to taste Season generously.

Preparation

  • Gather all your ingredients on a clean workspace.

Cooking

  • In a large pan, heat the olive oil over medium heat.
  • Add the diced chicken pieces to the pan, season with salt, pepper, and garlic powder, and cook until no longer pink, about 5-7 minutes.
  • While chicken is cooking, combine honey and BBQ sauce in a bowl and whisk until well blended.
  • Once chicken is cooked, pour the honey BBQ sauce over it and stir well to coat.
  • Simmer for an additional 5 minutes to meld flavors.

Serving

  • To serve, spoon cooked rice onto a plate and top with honey BBQ chicken.
  • Drizzle extra sauce over the rice, if desired.
  • Optional: Garnish with chopped green onions or cilantro.
