  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice Rinsed before toasting
  • 2 cups chicken broth
  • ½ cup BBQ sauce Choose a gluten-free option if needed
  • ¼ cup honey Can substitute with maple syrup

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • to taste salt and pepper

  • 1 cup mixed vegetables Optional

Instructions
 

Preparation

  • Gather all ingredients and rinse the rice, setting it aside.
  • In a bowl, season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.

Cooking

  • Heat a skillet over medium heat and sear the seasoned chicken thighs for about 3–4 minutes on each side until golden brown. Remove and set aside.
  • In a bowl, mix BBQ sauce and honey, preparing it for later use.
  • In the same skillet, add the uncooked rice and toast for 1–2 minutes over medium heat, stirring until slightly golden.
  • Pour in the chicken broth and half of the prepared sauce, stirring to combine.
  • Return the seared chicken to the skillet and drizzle the remaining sauce on top.
  • Cover and let simmer on low heat for approximately 15 minutes.
  • If using, add mixed vegetables after 15 minutes and cover again, cooking for an additional 5 minutes.

Serving

  • Let the dish sit for 5 minutes before serving. Garnish with chopped green onions and serve hot.

Notes

For added depth of flavor, consider marinating the chicken in the sauce overnight. Adjust honey to suit sweetness preferences.
