  • 2 tbsp Olive Oil Flavored oil can be used for added depth.
  • 3 tbsp Honey Can be substituted with maple syrup or agave nectar.
  • 2 tbsp Butter Vegan butter works well for a dairy-free alternative.
  • 2 cloves Garlic Minced for best flavor infusion.

Preparation

  • Wash the carrots thoroughly. Peel if using larger carrots and cut into evenly sized pieces.

Cooking

  • Preheat your oven to 400°F (200°C).
  • In a small saucepan over medium heat, melt the butter. Add minced garlic, stirring gently. Remove from heat and whisk in honey and olive oil.
  • Toss prepared carrot pieces with the butter-honey-garlic mixture until evenly coated.
  • Spread the carrots in a single layer on a lined baking sheet.
  • Roast for about 25–30 minutes, tossing halfway through for even browning.
  • Check for doneness when fork-tender and golden on the edges.
  • Serve warm, drizzling any remaining sauce over the carrots.

Notes

Store leftovers in an airtight container in the refrigerator for 3–4 days, or freeze for up to three months. Reheat in the oven or stovetop.
