Preparation

  • Start by washing and peeling the carrots. If you're using baby carrots, you can skip the peeling step. Cut them into uniform pieces – about two inches long – to ensure even cooking.
  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the carrots with olive oil, ensuring they are well-coated.
  • Drizzle honey over the carrots, using a spatula to mix everything together so the honey coats the carrots evenly.
  • Melt the butter and add the minced garlic. Pour this mixture over the carrots and mix thoroughly.
  • Sprinkle salt and pepper onto the mixture, adjusting according to your taste.
  • Spread the carrots out on a baking sheet in a single layer to allow proper caramelization.
  • Roast the carrots in the preheated oven for about 25–30 minutes, turning them halfway through.
  • Once roasted, remove the carrots and allow them to cool slightly. Garnish with fresh herbs like parsley or thyme before serving.
