Preparation

  • Gather your ingredients and tools: a large mixing bowl, cutting board, a sharp knife, and a baking sheet.
  • Preheat your oven to 400°F (200°C).
  • Wash, peel, and cube the sweet potatoes into 1-inch pieces.
  • In the mixing bowl, combine the cubed sweet potatoes with olive oil, garlic powder, salt, black pepper, and dried thyme. Toss until well-coated.
  • Spread the sweet potatoes in a single layer on a baking sheet.
  • Slice the honey garlic sausages into rounds and place them on the baking sheet with the sweet potatoes.

Cooking

  • Roast in the preheated oven for 25-30 minutes. Stir halfway through for even cooking.
  • Check that sweet potatoes are tender and sausage is golden brown. Remove from oven and let sit for a few moments.

Serving

  • Spoon the mixture onto plates and garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or up to 3 months in the freezer. Reheat in the oven at 350°F (180°C). Avoid overcrowding the baking sheet for optimal roasting.
