Ingredients

Base Ingredients

  • 1 cup all-purpose flour Can use gluten-free flour for a gluten-free version.
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened Can substitute with coconut oil or dairy-free butter for a dairy-free option.
  • ½ teaspoon cinnamon Optional for additional flavor.
  • ¼ teaspoon salt

Filling and Topping Ingredients

  • 2 cups sliced peaches Ensure they are ripe for the best flavor.
  • ¼ cup honey Can substitute with maple syrup for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

Preparation

  • Start by washing and slicing the peaches, ensuring they are pit-free and evenly sized for consistent baking. Gather all your other ingredients, placing them within easy reach.
  • Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan with butter or non-stick spray.
  • In a large mixing bowl, combine the flour, rolled oats, brown sugar, granulated sugar, cinnamon, and salt. Stir until well mixed.
  • Add the softened butter into the dry mixture and mix until it resembles a crumbly texture. You can use a fork or your hands for this step to ensure an even mixture.
  • Set aside 1 cup of the crumbled mixture for later. Press the remaining mixture evenly into the bottom of the prepared baking pan to form a solid base.
  • Spread the sliced peaches evenly over the crust, making sure to distribute them well.
  • In the bowl with the reserved crumbled mixture, add honey, vanilla extract, and lemon juice. Mix until it becomes crumbly again, then sprinkle this topping over the layered peaches.

Baking

  • Place the baking pan in the preheated oven and bake for 30-35 minutes until the topping turns golden brown.
  • Once baking is complete, remove the pan from the oven and let it cool for at least 15 minutes.
  • Once cooled, slice into square bars and serve.

Notes

These bars can be made ahead of time and stored for future treats. Consider serving them with a scoop of vanilla ice cream or a dollop of whipped cream.
