Honey Lime Chicken Avocado Rice

Ingredients
  

For the Chicken

  • 4 pieces chicken breasts Preferably boneless and skinless
  • ¼ cup honey Use local honey for best flavor
  • ¼ cup lime juice (freshly squeezed) Fresh lime juice is recommended
  • 1 tablespoon olive oil To be used for cooking the chicken

For Assembly

  • 2 pieces avocados, diced Add on top after cooking
  • 2 cups cooked rice (white or brown) Use leftover rice if available

Instructions
 

Preparation

  • Gather all your ingredients, dicing the avocados and measuring honey and lime juice.
  • Pat chicken breasts dry with a paper towel.

Marinating

  • In a bowl, mix honey and lime juice. Coat the chicken breasts evenly and marinate for at least 30 minutes.

Cooking

  • Cook rice according to package instructions or reheat leftover rice.
  • Heat olive oil in a skillet over medium heat.
  • Add marinated chicken to the skillet and cook for 6–7 minutes until golden brown.
  • Flip chicken and cook for another 6–7 minutes until fully cooked, checking for an internal temperature of 165°F (75°C).
  • Transfer chicken to a plate and let it rest for 5 minutes.
  • Slice the chicken into thin strips.

Assembly

  • To serve, place cooked rice on each plate. Top with sliced chicken and diced avocado. Season with salt and pepper.

Notes

For extra flavor, add minced garlic to the marinade and garnish with fresh cilantro. Leftovers can be stored in the fridge for up to 2-3 days.
