Ingredients
  

For the marinade

  • cup honey Use fresh honey for best flavor.
  • ¼ cup lime juice Freshly squeezed preferred.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 boneless, skinless chicken breasts chicken breasts

For the mango salsa

  • 1 ripe mango diced mango Choose a ripe mango for sweetness.
  • ¼ cup red onion Finely chopped.
  • ¼ cup fresh cilantro Chopped.
  • 1 jalapeño Diced (optional, for heat).

Serving suggestions

  • Cooked rice or salad or tortillas For serving.

Preparation

  • Gather all your ingredients. Trim any excess fat from the chicken breasts and pat them dry with paper towels.
  • In a bowl, blend the honey, lime juice, salt, and pepper until well combined.
  • Place chicken breasts in the bowl with the marinade, making sure each piece is well coated. Cover and let marinate for at least 30 minutes, ideally a few hours or overnight.

Cooking

  • Preheat grill to medium-high or oven to 400°F (200°C).
  • If grilling, place marinated chicken on grill and cook for about 6-7 minutes on each side, until internal temperature reaches 165°F (75°C).
  • If baking, place chicken on a baking sheet and bake for 25-30 minutes, flipping halfway through.
  • While chicken cooks, prepare the mango salsa by mixing diced mango, chopped red onion, cilantro, and jalapeño. Season with salt to taste.
  • Once cooked, let chicken rest for 5 minutes before slicing.
  • Serve chicken slices topped with mango salsa and your choice of sides.

Notes

For a vegan alternative, substitute honey with agave syrup and chicken with firm tofu or chickpeas.
