For the Chicken

  • 2 large boneless, skinless chicken breasts or 4 small chicken breasts
  • 2 tablespoons honey
  • 2 pieces limes (juiced and zested)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Mango Salsa

  • 1 large ripe mango (diced)
  • ¼ cup red onion (finely chopped)
  • 1 small jalapeño (minced, optional) for heat
  • 2 tablespoons fresh cilantro (chopped)
  • 1 piece lime (juiced) for salsa

Preparation

  • Begin by gathering all your ingredients, including mincing the garlic, chopping the red onion, dicing the ripe mango, and zesting and juicing the limes.

Making the Marinade

  • In a small bowl, whisk together honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and black pepper.

Marinating the Chicken

  • Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over, ensuring each piece is well-coated. Marinate for at least 30 minutes, or up to 12 hours in the fridge.

Preparing the Mango Salsa

  • In a medium bowl, combine diced mango, chopped red onion, minced jalapeño (if using), and chopped cilantro. Squeeze lime juice over and season with salt and pepper to taste. Mix well and let sit for 10-15 minutes.

Cooking the Chicken

  • If grilling, preheat grill to medium-high. Cook marinated chicken for about 5-6 minutes per side or until internal temperature reaches 165°F (75°C). If using a skillet, cook for approximately 5-7 minutes per side.

Serving

  • Once cooked, allow chicken to rest for about 5 minutes before slicing. Serve over rice, quinoa, salad greens, or tortillas topped with mango salsa and garnished with lime wedges.
