  • 1 cup chocolate chips

Ganache Ingredients

  • 1 cup heavy cream
  • ½ cup chocolate chips for ganache
  • Mini marshmallows for topping

Preparation

  • Start by gathering all your ingredients.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and fluffy.
  • Beat in the eggs, one at a time, and then stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually stir the dry mixture into the creamed butter mixture until just combined.
  • Fold in the chocolate chips evenly throughout the dough.

Baking

  • Scoop the dough into a greased muffin tin, pressing it down to form cookie cups.
  • Bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until lightly golden.

Ganache and Assembly

  • Heat the heavy cream in a saucepan until it just begins to simmer, then remove from heat and stir in the chocolate chips until smooth.
  • Fill each cookie cup with the chocolate ganache and top with mini marshmallows. Allow to set before serving.

Notes

Store in an airtight container at room temperature for up to 3 days. Freeze for up to 2 months for longer storage.
