  • In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth.
  • Gently fold in the shredded cheddar cheese into the creamy base.
  • Stir in the diced cooked chicken and corn kernels.
  • Add the diced tomatoes with green chilies and mix thoroughly.
  • Incorporate the chopped green onions, minced garlic, chili powder, cumin, salt, and black pepper, ensuring everything is evenly combined.
  • Transfer the dip mixture to an oven-safe dish and spread evenly.
  • Bake in a preheated oven for 25-30 minutes, or until heated through and bubbly.
  • Remove from oven, allow to cool for a few minutes, and then serve warm with tortilla chips.

Notes

For a lighter version, consider substituting Greek yogurt for sour cream or mayonnaise. You can also make this dip ahead of time and store it in the fridge before baking.
