  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite) For best melting
  • ½ cup hot honey BBQ sauce Adjust for desired sweetness
  • 4 large tortillas (flour or corn, your choice) Use gluten-free tortillas if needed
  • 2 tablespoons olive oil For cooking

Preparation

  • Shred the cooked chicken if not already done, then combine with hot honey BBQ sauce in a bowl.

Cooking

  • Heat a skillet over medium heat and add olive oil. Allow it to warm until it shimmers.
  • Place one tortilla in the skillet, sprinkle half with shredded cheese, add a portion of the chicken mixture, and top with more cheese.
  • Fold the tortilla in half, pressing down with a spatula to secure the filling.
  • Cook for about 3-4 minutes until golden brown and crispy on one side.
  • Flip the quesadilla and cook for an additional 2-3 minutes until the other side is golden brown and the cheese is melted.
  • Transfer the quesadilla to a cutting board, let cool for a minute, and slice into wedges.
  • Repeat the process with remaining tortillas, chicken, and cheese mixture.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months. Reheat in a skillet for best texture.
