Ingredients
  

  • 300 g udon noodles
  • 4 cloves garlic minced
  • 2 cups mixed vegetables such as bell peppers or bok choy, chopped
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce
  • 1–2 tsp black pepper to taste
  • 2 green onions chopped, for garnish
  • 200 g optional protein such as chicken or tofu, cubed

Instructions
 

  • Prepare all ingredients by chopping vegetables, mincing garlic, and cubing the protein of choice.
  • Bring a pot of water to boil and cook the udon noodles according to the package instructions (3–5 minutes). Drain and rinse with cold water to prevent sticking.
  • Heat sesame oil in a wok over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add the vegetables and stir-fry for 3–5 minutes until tender but still crisp.
  • Add chicken or tofu and cook until fully cooked through (or heated through if pre-cooked).
  • Add the cooked udon noodles to the pan. Toss gently to combine with the vegetables and protein.
  • Pour in soy sauce and sprinkle black pepper to taste. Toss well until noodles are evenly coated and heated through.
  • Garnish with chopped green onions and serve hot.

Notes

For extra spice, add chili flakes or chili paste. Substitute rice noodles for a gluten-free version or tofu for a vegan option. Avoid overcooking noodles to maintain their chewy texture.
