Ingredients
  

For the Cajun Cod Bites

  • 1 lb cod fillets cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste
  • vegetable oil for frying

For the Creamy Garlic Mayo

  • ½ cup mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • fresh parsley for garnish

Instructions
 

  • Prepare ingredients by cutting the cod fillets into bite-sized pieces and gathering all necessary components.
  • In a shallow bowl, mix flour with salt, pepper, Cajun seasoning, garlic powder, and paprika to season the coating.
  • Set up a breading station with three bowls: one for seasoned flour, one for beaten eggs, and one for breadcrumbs.
  • Coat each piece of cod in the flour, dip into the egg, then coat in breadcrumbs until evenly covered.
  • Heat oil in a deep skillet over medium-high heat. Fry the cod bites in batches for 4–5 minutes until golden and crispy.
  • Remove from oil and drain on paper towels to remove excess oil.
  • Prepare the creamy garlic mayo by mixing mayonnaise, minced garlic, lemon juice, and Dijon mustard in a small bowl. Stir until smooth.
  • Serve the crispy Cajun Cod Bites with a side of creamy garlic mayo for dipping. Garnish with fresh parsley and enjoy immediately.

Notes

For a lighter version, bake the cod bites at 400°F (200°C) for 15–18 minutes or air-fry at 375°F for 10–12 minutes. Adjust the spice level by adding more or less Cajun seasoning. The garlic mayo can also be made ahead and stored in the refrigerator for up to 3 days.
