Ingredients
  

Pastry Dough

  • 1 cup all-purpose flour substitute with whole-wheat flour if desired
  • ½ cup unsalted butter cold, cut into cubes
  • 1 pinch salt
  • 3–4 tbsp cold water adjust for consistency

Filling

  • 12 oz onions thinly sliced
  • 1 tbsp butter or olive oil
  • 1 pinch salt
  • 1 pinch sugar helps with caramelization
  • ½ tsp dried thyme or fresh thyme
  • 2 oz soft goat cheese can substitute with feta
  • 1 egg
  • ¼ cup heavy cream or half-and-half

Instructions
 

  • Preheat oven to 375°F (190°C). Prepare and measure all ingredients.
  • In a mixing bowl, combine flour and salt. Cut in the cold butter until mixture resembles coarse crumbs.
  • Gradually add cold water, stirring until the dough forms a ball. Do not overmix. Wrap in plastic and chill for 30 minutes.
  • In a skillet, melt butter over medium heat. Add onions, salt, and sugar. Cook 15–20 minutes, stirring frequently, until golden and caramelized.
  • Stir thyme into the caramelized onions and cook for another minute. Remove from heat and let cool.
  • On a floured surface, roll out the dough to 1/8-inch thickness. Cut into circles and place into greased tartlet pans.
  • Prick the bottoms with a fork and blind bake for 10 minutes until lightly golden.
  • Whisk egg and cream together in a small bowl. Mix in goat cheese and caramelized onions.
  • Fill each tart shell with the mixture, being careful not to overfill.
  • Bake 20–25 minutes until golden and set. Allow to cool slightly before serving.

Notes

Serve warm or at room temperature. These tartlets pair beautifully with arugula salad or a chilled white wine. To make ahead, prepare shells and filling separately, assemble, and bake before serving.
