  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • ½ cup unsalted butter softened
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together brown sugar, granulated sugar, and butter until light and fluffy (about 3–5 minutes).
  • Beat in the vegetable oil, egg, and vanilla extract until fully combined.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  • Use a cookie scoop or tablespoon to drop dough balls onto prepared baking sheets, leaving space for spreading.
  • Bake for 10–12 minutes or until the edges are lightly golden. Centers should look slightly underbaked.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, sprinkle a touch of sea salt on top before baking or add chocolate chips or chopped nuts. To make them vegan, use coconut oil and a flaxseed egg. Store in an airtight container for up to a week or freeze for up to 3 months.
