Ingredients
  

Pancake Batter

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 large egg
  • 1 cup buttermilk
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • maple syrup for serving

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and gently stir until combined. Do not overmix — some lumps are okay.
  • Heat a lightly greased skillet or griddle over medium heat.
  • Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface, about 2–3 minutes.
  • Flip pancakes and cook for another 1–2 minutes until golden brown. Adjust heat if necessary.
  • Serve warm with maple syrup, fresh fruits, whipped cream, or powdered sugar for a festive touch.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 1 month. Reheat in the microwave or toaster. Avoid overmixing the batter for fluffier pancakes.
