Preparation

  • Start by refrigerating the can of full-fat coconut milk overnight to allow the cream to solidify.
  • After refrigeration, carefully open the can and pour out the coconut water into a separate bowl, keeping the solidified coconut cream.
  • Scoop the solid coconut cream into a mixing bowl.

Frosting Mix

  • Beat the coconut cream on medium speed for 2-3 minutes until it becomes light and airy.
  • Add the powdered sugar (if desired), vanilla extract, and salt, mixing for another 1-2 minutes until combined.
  • Check the texture; if too thick, add a tablespoon of reserved coconut milk and mix again until smooth.

Final Adjustments

  • Taste the frosting and adjust sweetness as needed by adding more powdered sugar or your preferred sweetener.
  • Once satisfied with the flavor and texture, it's ready to use.

Notes

Store in an airtight container in the fridge for up to a week. For longer storage, freeze in an airtight container and thaw in the fridge overnight before use. Avoid using light coconut milk as it will yield a runnier frosting.
