Ingredients
  

Beef & Cheddar Sandwich

  • 1 lb deli roast beef thinly sliced
  • 4 onion rolls or hamburger buns
  • 1 cup beef broth

Cheddar Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 ½ cups cheddar cheese shredded

Red Ranch Sauce

  • ½ cup ketchup
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions
 

  • In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute.
  • Gradually whisk in milk and cook until thickened. Stir in cheddar cheese until smooth. Set aside warm.
  • In a small bowl, mix all red ranch sauce ingredients until combined.
  • Heat beef broth in a skillet. Add roast beef and warm gently until heated through.
  • Toast onion rolls lightly if desired.
  • Assemble sandwiches with warm roast beef, cheddar cheese sauce, and red ranch sauce.

Notes

For an authentic Arby’s-style flavor, keep the beef very moist and avoid overcooking. Serve with curly fries.
