Ingredients

  • 2 cups black-eyed peas soaked overnight
  • 4 cups vegetable broth or water
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 1 bay leaf optional
  • 1 tsp thyme optional

Instructions
 

  • Rinse and soak black-eyed peas overnight to soften and reduce cooking time.
  • Drain and rinse soaked peas. Add them to the crockpot along with vegetable broth, onion, garlic, bell pepper, smoked paprika, thyme, salt, pepper, and bay leaf.
  • Stir well to combine all ingredients evenly in the crockpot.
  • Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until peas are tender and creamy.
  • Remove bay leaf before serving. Taste and adjust seasonings as needed.
  • Serve warm as a main dish or side with cornbread, rice, or salad.

Notes

For a smoky, savory variation, add cooked sausage or bacon. To make it spicy, mix in jalapeños or cayenne pepper. This recipe is naturally vegan and gluten-free, and it stores well — refrigerate for up to 4 days or freeze for 3 months.
