  • 8 oz pasta (spaghetti or fettuccine)
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • ½ cup heavy cream
  • ½ cup Parmesan cheese grated
  • salt and pepper to taste
  • fresh basil for garnish

Instructions
 

  • Step 1 – Prepare Ingredients: Gather all ingredients. Mince garlic, halve cherry tomatoes, and wash spinach thoroughly.
  • Step 2 – Cook the Pasta: Boil salted water and cook pasta for 8–10 minutes until al dente. Drain and set aside.
  • Step 3 – Sauté Garlic: In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  • Step 4 – Add Cherry Tomatoes: Add halved tomatoes and cook for 3–4 minutes until softened and juicy.
  • Step 5 – Add Spinach: Stir in spinach and cook until wilted, about 2 minutes.
  • Step 6 – Mix in Cream: Pour in heavy cream and let simmer for 2 minutes until slightly thickened.
  • Step 7 – Combine Pasta and Cheese: Add pasta and Parmesan cheese. Toss well until evenly coated.
  • Step 8 – Season and Serve: Add salt, pepper, and garnish with fresh basil. Serve warm with garlic bread or salad.

Notes

For a vegan version, substitute heavy cream with coconut cream and use nutritional yeast instead of Parmesan. Add grilled chicken or shrimp for a heartier version. Best served fresh, but can be stored for up to 3 days in the refrigerator.
