Ingredients
  

  • 2 chicken breasts fresh or thawed
  • 3 tbsp garlic butter for cooking
  • 1 medium zucchini sliced
  • 1 cup sweet corn fresh, canned, or frozen
  • salt and pepper to taste
  • fresh parsley optional, for garnish

Instructions
 

  • Prepare ingredients: clean and slice the zucchini, pat the chicken dry, and measure the garlic butter and corn.
  • In a large skillet, melt the garlic butter over medium heat until fragrant.
  • Season chicken breasts with salt and pepper, then sear for 5–7 minutes on each side until golden and cooked through (internal temperature 165°F).
  • Add sliced zucchini and corn to the skillet. Sauté together for 5–7 minutes until vegetables are tender and coated in garlic butter.
  • Taste and adjust seasoning with additional salt or pepper as needed.
  • Remove from heat and garnish with fresh parsley before serving warm.

Notes

This dish can be made ahead and stored in the refrigerator for up to three days. For added flavor, try mixing in red pepper flakes, lemon juice, or extra herbs like thyme. Avoid overcooking the chicken to maintain juiciness.
