Ingredients

  • 1 rib roast about 4–5 pounds
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Allow the rib roast to come to room temperature for about 1 hour before cooking.
  • Preheat the oven to 450°F (232°C).
  • In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper to form an herb paste.
  • Rub the herb mixture evenly over the rib roast.
  • Place the roast bone-side down on a rack in a roasting pan.
  • Roast at 450°F (232°C) for 15 minutes to form a crust.
  • Reduce the oven temperature to 325°F (163°C) and continue roasting for 1.5–2 hours or until the internal temperature reaches 135°F (57°C) for medium-rare.
  • Remove from the oven and tent loosely with foil. Let it rest for 15–20 minutes before slicing.
  • Slice and serve with your favorite sides such as mashed potatoes or roasted vegetables.

Notes

Marinate the roast overnight for deeper flavor. Use a meat thermometer for perfect doneness and let it rest before slicing for juicy results. Leftovers can be refrigerated for up to 4 days or frozen for 3 months. Reheat gently at 300°F (149°C) until warmed through.
