Ingredients
  

  • 1 lb ground beef
  • 4 medium potatoes sliced thin
  • 1 can cream of mushroom soup 10.5 oz can
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 onion chopped

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef and chopped onion over medium heat until the beef is browned and onions are translucent, about 5–7 minutes.
  • Grease a 9x13-inch baking dish lightly with oil or cooking spray.
  • Layer half of the sliced potatoes evenly in the bottom of the baking dish.
  • Spread the cooked beef and onion mixture over the potatoes.
  • Spoon and spread the cream of mushroom soup evenly over the beef layer.
  • Add the remaining sliced potatoes on top.
  • Sprinkle shredded cheese over the top layer.
  • Bake uncovered for about 1 hour, or until potatoes are tender and cheese is bubbly and golden brown.
  • Let cool for 5 minutes before serving. Enjoy warm!

Notes

For extra flavor, try adding chopped bell peppers or mushrooms to the beef mixture. You can substitute the cream of mushroom soup with cream of chicken or homemade mushroom sauce. This casserole freezes well and makes excellent leftovers!
