  • 1 cup black-eyed peas soaked overnight
  • 1 cup rice
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 tbsp olive oil
  • 1 tsp salt or to taste
  • ½ tsp black pepper
  • ½ tsp cayenne pepper optional
  • green onions for garnish

Instructions
 

  • Rinse and soak black-eyed peas overnight in water for at least 8 hours to soften them.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking for 5–7 minutes until translucent and fragrant.
  • Drain soaked peas and add them to the pot. Pour in chicken or vegetable broth, then season with salt, black pepper, and cayenne pepper.
  • Bring to a boil, then reduce heat and simmer uncovered for about 30 minutes, stirring occasionally until peas are tender.
  • Once peas are tender, stir in the rice. Cover and cook according to rice package instructions (about 18–20 minutes), until rice is fluffy and liquid is absorbed.
  • Remove from heat, fluff with a fork, and adjust seasoning if necessary.
  • Serve hot, garnished with chopped green onions. Enjoy your Hoppin’ John with cornbread or collard greens for a classic Southern meal!

Notes

For a smoky twist, add cooked bacon or smoked sausage when sautéing the onions. To keep it vegan, use vegetable broth instead of chicken broth. Leftovers taste even better the next day — refrigerate for up to 4 days or freeze for 3 months. Traditionally served on New Year’s Day for good luck and prosperity!
