  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup buttermilk

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and sugar using a hand mixer until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.
  • Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10–12 minutes or until the edges are lightly golden and the centers are soft.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra indulgence, drizzle a simple glaze made with powdered sugar and milk over cooled cookies. Add lemon zest or a sprinkle of cinnamon for a flavor twist. These cookies freeze beautifully for up to three months.
