Ingredients
  

Crust

  • 1 ½ cups chocolate cookies crushed
  • ½ cup butter melted

Filling

  • 2 cups cream cheese softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • ¼ cup cocoa powder unsweetened

Topping

  • 1 can cherry pie filling for topping
  • fresh cherries optional for garnish

Instructions
 

  • Crush the chocolate cookies into fine crumbs and mix with melted butter until combined. Press the mixture into the base of a springform pan to form the crust. Set aside.
  • In a large bowl, beat softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  • In a separate bowl, whip heavy cream until stiff peaks form, then gently fold in cocoa powder.
  • Fold the whipped cream mixture into the cream cheese mixture until fully combined and smooth.
  • Spread the cheesecake filling evenly over the prepared crust, smoothing the top with a spatula.
  • Cover and refrigerate for at least 4 hours or overnight until the cheesecake is firm and set.
  • Before serving, top the cheesecake with cherry pie filling and garnish with fresh cherries if desired.

Notes

Ensure your cream cheese is at room temperature before mixing to avoid lumps. For a richer chocolate flavor, use dark cocoa powder. You can prepare this cheesecake up to two days in advance — store it covered in the refrigerator until ready to serve.
