Ingredients
  

Fritter Batter

  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 2 tablespoons baking powder
  • 2 tablespoons granulated sugar For the batter
  • ½ teaspoon cinnamon Adds warmth and flavor
  • ¼ teaspoon nutmeg Optional for added spice
  • ¼ teaspoon salt
  • 1 large egg, beaten Can substitute with flax egg for vegan version
  • 1 cup buttermilk Can be replaced with almond milk or oat milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegetable oil For batter
  • 6-8 pieces pineapple rings Fresh or canned, drained and dried well

Coating

  • ¼ cup granulated sugar For coating the fritters
  • ½ teaspoon cinnamon For coating

Instructions
 

Preparation

  • Drain and dry pineapple rings thoroughly. If using fresh, slice into 1/2-inch thick rings.
  • In a medium bowl, whisk together flour, baking powder, sugar, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together the beaten egg, buttermilk, vanilla extract, and vegetable oil.
  • Gently combine the wet mixture with the dry ingredients until just mixed.

Cooking

  • Heat about 2 inches of vegetable oil in a large pot to 350°F.
  • Dip each pineapple ring into the batter until well coated.
  • Carefully lower battered rings into the hot oil and fry for 1-2 minutes on each side until golden brown.
  • Transfer cooked fritters onto paper towels to drain excess oil.
  • In a small bowl, mix the granulated sugar and cinnamon for the coating.
  • While still warm, toss fritters in the cinnamon-sugar mixture until coated.

Notes

Serve the fritters with vanilla ice cream, whipped cream, or tropical fruit salsa for an added touch. Best enjoyed fresh.
