  • 1 whole chicken about 3 to 4 lbs
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 lemon juiced
  • 4 carrots chopped
  • 4 potatoes chopped
  • 1 onion sliced
  • 1 zucchini or squash chopped
  • fresh herbs such as rosemary or thyme
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Mix garlic, olive oil, lemon juice, salt, and pepper in a small bowl.
  • Rub the mixture thoroughly over the chicken, including under the skin for maximum flavor.
  • Arrange chopped carrots, potatoes, onion, and zucchini evenly in a roasting pan.
  • Place the seasoned chicken on top of the vegetables.
  • Scatter fresh herbs around the pan for added aroma.
  • Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove from oven and let rest for 10 minutes before carving.
  • Serve the chicken with roasted vegetables and garnish with fresh herbs.

Notes

To make a vegetarian version, replace the chicken with a whole roasted cauliflower. Swap seasonal vegetables as desired—bell peppers, sweet potatoes, or parsnips work beautifully. For extra flavor, marinate the chicken for several hours before roasting.
