Ingredients
  

  • 2 cups cooked rice preferably day-old rice
  • 1 cup shrimp peeled and deveined
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 cup mixed vegetables carrots, peas, and corn
  • 2 green onions chopped
  • 2 eggs beaten
  • salt and pepper to taste

Instructions
 

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  • Add the shrimp and cook for 2–3 minutes until pink and cooked through. Remove from the pan and set aside.
  • In the same pan, add the beaten eggs and scramble them until fully cooked.
  • Add the mixed vegetables to the pan and cook for 2 minutes until tender.
  • Stir in the cooked rice, breaking up any clumps. Mix well with the vegetables and eggs.
  • Pour in 2 tablespoons of soy sauce and stir to evenly coat the rice mixture.
  • Add the cooked shrimp back to the pan and toss everything together.
  • Season with salt and pepper to taste, add chopped green onions, and cook for another minute.
  • Serve hot and enjoy your flavorful Shrimp Fried Rice.

Notes

Use cold, day-old rice for the best texture. Avoid overcooking the shrimp to keep them tender. For extra flavor, add a drizzle of sesame oil or minced garlic.
