Ingredients
  

Main Ingredients

  • 8 oz elbow macaroni cooked al dente
  • 2 cups smoked gouda cheese shredded
  • 2 cups sharp cheddar cheese shredded
  • 3 cups milk
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • salt and pepper to taste
  • ½ cup bread crumbs optional, for topping

Instructions
 

  • Bring a large pot of water to a boil and cook macaroni until al dente, about 7-8 minutes. Drain and set aside.
  • In the same pot, melt butter over medium heat. Add flour and whisk for 1 minute to create a roux.
  • Gradually whisk in milk until smooth. Continue to cook until the sauce thickens and coats the back of a spoon.
  • Reduce heat to low and stir in smoked gouda and cheddar cheese until fully melted and smooth.
  • Season with garlic powder, onion powder, salt, and pepper to taste.
  • Add cooked macaroni and mix until evenly coated.
  • Optional: Transfer to a baking dish, top with bread crumbs, and bake at 350°F (175°C) for 20 minutes until golden and bubbly.

Notes

For a luxurious touch, drizzle with truffle oil or mix in crispy bacon. To make it gluten-free, use gluten-free pasta and flour. Store leftovers in the fridge for up to 3-5 days, or freeze for up to 2 months.
