Ingredients
  

Crust

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted

Cheesecake Filling

  • 2 packages (8 oz each) cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream whipped to soft peaks

Topping

  • 2 cups fresh strawberries chopped

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Combine graham cracker crumbs and melted butter in a bowl until mixture resembles wet sand.
  • Press mixture firmly into the bottom of a springform pan to form a crust. Bake for 8–10 minutes until lightly golden. Cool completely.
  • In a mixing bowl, beat softened cream cheese and sugar until smooth and creamy.
  • Add vanilla extract and mix until incorporated.
  • In a separate bowl, whip heavy cream until soft peaks form.
  • Fold whipped cream into the cream cheese mixture until evenly combined and fluffy.
  • Arrange chopped strawberries over the cooled crust.
  • Pour the cheesecake filling over strawberries and spread evenly with a spatula.
  • Refrigerate for at least 4 hours (or overnight) to set.
  • Slice and serve chilled. Garnish with extra strawberries or whipped cream if desired.

Notes

Use ripe, fresh strawberries for best results. Allow sufficient chilling time for the cheesecake to set completely. For a flavor twist, drizzle melted chocolate or add lemon zest to the filling.
