Ingredients
  

Crepes

  • 2 cups all-purpose flour
  • 4 large eggs
  • 2.5 cups milk
  • ¼ cup melted butter
  • 2 tbsp sugar
  • 1 tsp vanilla extract

Filling

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 2 cups fresh strawberries sliced

Instructions
 

  • In a large bowl, whisk together flour, eggs, milk, melted butter, sugar, and vanilla extract until smooth. Let the batter rest for 15 minutes.
  • Heat a non-stick skillet over medium heat and lightly grease it. Pour a small amount of batter, swirling to coat the pan thinly. Cook for 1–2 minutes per side until golden. Repeat for all crepes and set aside to cool.
  • Whip heavy cream and powdered sugar together using an electric mixer until soft peaks form. Do not overbeat.
  • Place a crepe on a serving plate, spread a thin layer of whipped cream, and add sliced strawberries. Repeat layering until all crepes are used, ending with whipped cream on top.
  • Decorate with extra strawberries and, optionally, a drizzle of chocolate sauce or mint leaves for garnish.
  • Refrigerate for at least 1 hour before serving to allow the layers to set. Slice gently and serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze individual crepes for up to 2 months. To make it dairy-free, use coconut milk and whipped coconut cream. For a twist, add citrus zest or a layer of Nutella between crepes.
